But why live life without enjoying the delicious flavors of a Reuben sandwich when we can just make it low carb? So, I took to the kitchen, and I have to tell you ... this is possibly my favorite low carb recipe.<\/p>\n\n\n\n

Corned Beef and Coleslaw:<\/strong> To make six servings of this Reuben egg roll bow recipe, you will need 1\u00a0lb\u00a0of sliced corned beef and 1 lb of shredded coleslaw mix from your favorite butcher or local grocery store.<\/p>\n\n\n\n

Dairy:<\/strong> Add 1\u00a0cup\u00a0Swiss cheese and two\u00a0tablespoons\u00a0of butter to the egg roll bowl mix to continue building on those Reuben flavors we all know and love. <\/p>\n\n\n\n

If you're a fan of Thousand Island dressing, you will love this Russian dressing just as much ... if not more! <\/p>\n\n\n\n

Both Thousand Island and Russian dressing have the same base, but Russian dressing kicks it up a notch by having a slight kick.<\/p>\n\n\n\n

To make Russian dressing, you will need \u00bd\u00a0cup of\u00a0mayonnaise<\/a>, \u00bc\u00a0cup of\u00a0Alternasweets spicy ketchup<\/a>, 4\u00a0oz of a\u00a0small dill pickle, 1\u00a0tbsp of\u00a0sauerkraut<\/a>,1\u00a0tsp of\u00a0Worcestershire<\/a> sauce, and1\u00a0tsp\u00a0Apple cider vinegar<\/a>.<\/p>\n\n\n\n

Now, although I personally think you will regret it because this homemade dressing is so good. I do have a time-saving tip for you.<\/p>\n\n\n\n

If you are in a pinch or looking to save time, you can cut a corner by using store-bought thousand island dressing instead.<\/p>\n\n\n\n

How to Make Low Carb Reuben Egg Roll Bowls<\/h2>\n\n\n\n

Toast caraway seeds.<\/strong> Melt butter in a pan and lightly toast half of the caraway seeds.<\/p>\n\n\n\n

Saute the corned beef.<\/strong> Slice your corned beef into \u00bd-inch ribbons before adding to the pan to saut\u00e9 for 3-5 minutes covered<\/p>\n\n\n\n

Cook the coleslaw.<\/strong> Add coleslaw mix and cook for another 3-5 minutes covered.<\/p>\n\n\n\n

Add cheese.<\/strong> Stir the mixture until combined. Once combined, turn off the heat and top with Swiss cheese. Cover for 3-5 minutes until cheese has melted.<\/p>\n\n\n\n

Garnish.<\/strong> Before serving, drizzle Russian dressing on top and garnish with scallions and remaining caraway seeds.<\/p>\n\n\n\n

Blend until smooth.<\/strong> To prepare dressing combine all ingredients in a food processor\/blender and pulse until smooth.<\/p>\n\n\n\n
