Cut cauliflower into florets and place in the dutch oven along with cherry tomatoes, sliced prosciutto, olive oil and seasonings. toss everything together then pour the crumbled feta on top.
Cover the pot Bake at 425 degrees F. for about 20 minutes then remove the lid and continure cooking for an additional 20 minutes just until the cauliflower is tender.
Stir all of the ingredients together until the cauliflower is coated with the melted feta and tomato sauce. sprinkle on some grated parmesan and fresh parsley and serve.
