    Keto Swedish Meatballs are the Ultimate Keto Comfort Food on a cold day. Savory Umami flavor in a rich and creamy sauce wrapped over mouthwatering meatballs. This low carb recipe will save you a trip to a European furniture store.

    Are Swedish Meatballs even Swedish??

    First of all Swedish meatballs were not created but a budget furniture store. Heck, the recipe doesn’t even originate from Sweden. Apparently they’re based off of a Turkish recipe by King Charles XII in the early 18th century. It doesn’t really matter where the original recipe came from. It only Matters that these Keto Swedish Meatballs are fantastic!!

    Low Carb Swedish Meatballs don’t have to be Traditional.

    In Sweden these meatballs are traditionally served with lingonberry Jam. I’m just going to pretend I’ve never heard of and omit completely. All That being said, I don’t mind bastardizing this recipe to suite my ketogenic lifestyle. My rule with food is there are no rules. Create food that meats your needs. I like to add and subtract ingredients to fit my dietary needs as well as my palate.

    Keto Swedish Meatballs

    I like to Create Depth of flavor through Spices.

    This recipe does have a lot of ingredients but its because I wanted to create a depth of flavor using spices. I love using spices to add flavor without changing the macros drastically. Each meatball recipe I create has different profiles using different combinations of flavors. Its amazing how different you can make a recipe by just changing the spice profile. Spiceology is a company that I’ve fallen in love with. All of there spices are ground fresh and the quality is superior to anything I’ve purchased off the shelf at my local grocery store. The company is chef owned and operated and most importantly their packaging is bad ass!!!

    You will find it retains the familiar flavor profile that you are used to. The bread crumbs normally found in most meatballs are added to bulk up the size and can be replaced with other more flavorful ingredients to keep the carbs at bay. This sauce is thickened with cream cheese instead of making a roux with butter and flour. The addition of sour cream at the end gives the sauce a rich tangy finish.

    Keto Swedish Meatballs

    Swedish meatballs are often thought of as that lame appetizer. Something that’s should be served in fondue sets in the seventies. However, I think you’ll find that placing these tasty bites over some cauliflower purée and topping with a silky mushroom sauce takes this dish from a first course afterthought to the center of attention at your dinner table. Either way these meatballs have amazing texture and don’t fall short in the flavor department.

    Ingredients

    Meatball Mixture

    • 1 lbs Ground Beef
    • 1 lbs Ground Bulk Sausage
    • 2 Eggs
    • 2 oz Boursin Cheese
    • ¼ cup Heavy Cream
    • 2 tbsp Minced Garlic
    • 2 tbsp Dry Minced Onion
    • 1 tbsp Stone Ground Mustard
    • 1 tbsp Tabasco
    • 1 tbsp Dry Parsley
    • 1 tbsp Smoked Paprika
    • 1 tsp Dry Mustard
    • ¼ tsp Ground Allspice
    • ¼ tsp Ground Clove
    • ¼ tsp Ground Cinnamon

    Mushroom Sauce

    • 4 oz Canned Mushrooms
    • 1 cup Heavy Cream
    • 1 cup Beef Bone Broth or stock
    • 4 oz Boursin Cheese
    • 2 tbsp Butter
    • 2 tbsp Sour Cream
    • 1 tbsp Dry Parsley
    • 1 tbsp Dry Minced Onion
    • 1 tsp Worcestershire
    • Season aggressively w/ black pepper

    Instructions

    • Preheat oven on convection if available to 425 degrees F
    • In a large mixing bowl combine all meatball ingredients then portion 2oz meatballs on a sheet pan lined with parchment paper. will make between 18-20 meatballs depending on size.
    • Bake meatballs for 25-30 minutes until fully cooked.
    • To make the sauce sweat onions over medium heat with butter until softened. Add mushrooms and sauté for about a minute.
    • Add Beef bone broth and Worcestershire to deglaze the pan, then add heavy cream and Boursin cheese. Whisk sauce until it has thickened
    • Taste sauce and add salt if needed, add black pepper and parsley before whisking in sour cream just before serving.

        It depends on how big you make the Meatballs, If you do small 2 oz Meatballs it ends up being 3-4 per serving but if you do bigger 4oz Meatballs it’s only 1-2 per serving
