    Low Carb Jalapeño Cranberry Sauce and Mayonnaise

    No more cylinder shaped canned Cranberry Sadness!  In no time at all you can make your own fresh cranberry sauce that will blow everyone away with a spicy jalapeño kick.

    Not only do you get my Low Carb Jalapeño Cranberry Sauce. You also get a bonus recipe for Jalapeño cranberry Mayonnaise. Step up your thanksgiving with this KETOFIED Cranberry Sauce.

    Low carb Jalapeno Cranberry sauce

    Kick the can and Make your own Jalapeño Cranberry Sauce.

    First off canned Cranberry Sauce is a total sugar bomb containing 28 carbs most coming from high fructose corn syrup in a ¼ cup serving. My recipe has 3 net carbs, ⅔ less calories and contains no added sugar. If that’s not reason enough, you can also impress your family and friends by making a fresh healthy version of this thanksgiving staple. The spicy kick of fresh jalapeño balanced with apple cider vinegar and lemon juice gives the cranberry sauce a tangy freshness. Sweetened with Allulose instead of sugar keeps the flavor but ditches the carbs. More on allulose later.

    Tart, Sour and Sweet

    The key to making a delicious homemade cranberry sauce is finding the balance of tart, sour and sweet. Cranberries are obviously incredibly tart, almost to strong on their own. Lemon Juice is where you’re sour flavor comes from and acts as a counter balance to the cranberry. To tame those strong flavors we need to bring sweetness to the party. If you wanted to take a paleo approach you could use raw honey for this recipe as a natural sweetener. Though higher in sugar and carbs it’s a much healthier option than corn syrup.

    I chose to use Allulose for this recipe because it’s derived from actual sugar but is not metabolized in the body. Everyone  has different tastes so when you’re preparing this recipe be sure to taste it after you’ve added the ingredients. If it’s not sweet enough feel free to adjust the amount of sweetener. If the sauce is too sweet some extra lemon juice or apple cider vinegar will help balance it out

    All in w/ Allulose 

    Allulose is fairly new to the keto friendly sweetener game. If you’re looking for a low carb sweetener that doesn’t contain sugar alcohols than Allulose may be an option for you. Allulose is actually naturally found in different fruits but in trace amounts. This sweetener has about 70% the sweetness of sucrose but has a glycemic index of zero. Another advantage of Allulose is that it doesn’t have the cooling aftertaste that erythritol has. Many fans of Allulose claim that they don’t have bloating or gastrointestinal distress using this product unlike some others. For me I found it to be very tasty as an ingredient and didn’t experience any bloating. Give it a try if you’re looking for an alternative low glycemic sweetener.

    Leftover Cranberry Sauce makes Amazing Mayonnaise!!

    Cranberry sauce is a wonderful condiment that reminds us of the holiday season but the next day it’s just something taking up space in the fridge. That’s when my creative side kicks in and I Re-purpose the sauce and turn it into a flavorful mayo to enjoy with my leftover turkey. Simply place your favorite mayonnaise along with your leftover cranberry sauce in a Mini Mason Jar and pulse it a few times with a Stick Blender.

    You can use this Jalapeño Cranberry Mayo on all sorts of things including a fantastic base to make turkey salad or make a Turkey Bacon Swiss Hand roll using Cutdacarb Flatbread. I love flavored mayonnaise and this is one of my favorites because of the tart sweetness it adds to anything you put it on.

    Low Carb Jalapeno Cranberry Sauce

    Ingredients

    • 4 cups Fresh Cranberries
    • ½ cup Allulose
    • ¼ cup Water
    • 2 tbsp Apple Cider Vinegar
    • 1 tbsp Avocado Oil
    • 1 Cinnamon Stick
    • 2 Lemons Zest and Juice
    • 2 Diced Jalapenos
    • ¼ tsp Real Salt
    • ½ tsp Black Pepper

    Instructions

    • Finely dice jalapenos and saute over medium heat with avacado oil until they begin to soften
    • add Cranberries, continue to saute until cranberries begin to burst. Squeeze in Lemons with zest, add water, Apple cider vinegar, a cinnamon stick and allulose.
    • Add seasoning, continue to stir untilcranberries have all burst and created a thick jelly like consistancy. Let cool completly before serving. garnish with sliced jalapenos and Lemon zest.
