    A New Approach to my Keto Weight Loss Journey.

    I’m currently working with a keto coach to change my eating habits. Mostly for accountability and to have a specific game plan for success. Even though I’ve lost over 250 lbs. I’ve still got more to go and the things that worked a year ago are not bringing me the results they once did. That’s why I decided to ask for help, which is not easy for me. 

    As I commit to this new program, I thought I would share the recipes that I’m creating. These recipes will be fairly simple and not involve too many ingredients. Keeping the dishes simple allows me to adjust the macros to fit my daily food goals. If I need more protein I’ll use extra meat. If I need to add fats I can always top the dish with extra butter, sour cream, mayo or cream cheese.

    Spicy Sausage Fettuccine Alfredo

    Miracle Noodles bulk up the recipe without adding carbs.

    The first dish I’m sharing is made with Miracle Noodles. I absolutely don’t think I could do this cut without them. They add bulk to my meals without throwing off my macros. I can saute them with proteins and fats to create very flavorful meals that take less than 20 minutes to prepare. There are many different varieties including rice, fettuccine, angel hair and penne. I find that the rice and angel hair are my personal favorites but I enjoy all of the different types.

    Keto Fettuccine Alfredo

    As a good Italian boy I had been craving fettuccine Alfredo. A simple cream sauce thickened with Parmesan or Romano cheese. I added some spicy ground Italian sausage and mini pepperoni to add fat as well as protein and tons of flavor. Some fresh basil and oregano from the garden is optional but does add fragrant herbaceous notes to the dish.

    This meal is not only amazing delicious but quite filling. I found myself satisfied both with the taste of the dish but also full without feeling sluggish. You can adjust the amount of protein and fats you use in the recipe by adding or subtracting the amount of sausage and butter you use. This will allow you to hit your macro goals for day.

    Always add your butter at the end!!

    One last tip, I always recommend adding butter at the end of the cooking process instead of the beginning. Butter will separate and become greasy at higher temperatures. If you fold the butter at the end it will incorporate perfectly to add a velvety richness to your sauce.

    Spicy Sausage Fettuccine Alfredo

    Ingredients
      

    • 2 Packs Miracle Noodles Fettuccine
    • 4 oz Spicy Italian Sausage
    • 1 oz Mini Pepperoni
    • ¼ cup Heavy Cream
    • 2 tbsp Butter
    • 2 tbsp Parmesan Cheese
    • ½ tsp Real Salt
    • ½ tsp Italian Seasoning
    • 2 tsp Calabrian Chiles

    Instructions
     

    • Drain and rinse fettuccine under hot water. Pat dry and let drain.

    • In a pan brown off spicy sausage over medium heat until about half way cooked then add pepperoni and continue to simmer.
    • Once the sausage is almost finished cooking add the fettuccine and sauté for a few minutes until noodles have absorbed most of the fat in the pan.
    • Pour in heavy cream and Calabrian Chilies,let reduce for a few minutes until cream begins to thicken. Season using salt and Italian seasoning.
    • Turn off heat and add butter and Parmesan cheese. Toss or stir until butter has melted and incorporated with the sauce.

    • Top with fresh oregano, basil and shaved Parmesan.

        You would add it in along with the heavy cream,
        I must have forgotten that ingredient from the description. thank you for the heads up, Ive added this step to the instructions
