When I make chicken salad it’s normally because I’ve got some leftover chicken that is kinda dry and unappealing on it’s own. Breast, thighs or even a leftover rotisserie chicken from the store. You can add some mayo and whatever else you’ve got in the fridge and boom, your boring chicken has new life.
Even though I make chicken salad all the time I never seem to make the same recipe twice. There’s a Chicken Salad for Everyone
There are no wrong recipes for chicken salad. It all depends on what you have on hand and what you’re in the mood for. This particular recipe hit the spot on multiple levels. Granola style cookie cluster might sound strange but if you break down the ingredients it’s not that weird. Nuts and seeds are used to make chicken salad all the time. Having the Lolli’s cinnamon pecan clusters just saves me from buying a bunch of different ingredients.
Fall Harvest Cinnamon Pecan Chicken Salad
Ingredients
- 1 lb Roasted Chicken Breast or Rotisserie Chicken
- ½ cup Lolli's Cinnamon Pecan Cookie Clusters
- ½ cup Mayonnaise
- 1 tbsp Dijon mustard
- ¼ cup Diced Celery
- ¼ cup Sliced Scallions
- ¼ cup Roasted Pumpkin Seeds
- 1 tbsp Fresh Parsley
- Salt & Pepper to taste
Instructions
- Chop roast chicken breast or pull rotisserie chicken, Crumble Lolli’s Cinnamon Pecan Cookie Clusters
- Dice celery and sliced scallions, then combine all remaining ingredients in a bowl and mix gently to combine
- Chill for 30 minutes before serving.
