What’s the deal with Mug Cakes?
If you have been looking for a dessert that requires minimal effort than this is the recipe for you. Mug cakes are a quick and easy dessert that you make in you microwave. I prefer to use a large 12 oz. Ramekin instead of a coffee mug but either will work just fine. If using regular sized coffee mugs you will split the recipe in half into 2 mugs and only microwave 60 seconds. This is the type of recipe that’s great on a weeknight when you don’t want to bake for an hour. You can literally stir all the ingredients together and about 90 seconds later dessert is ready.

There are literally hundreds of different flavors of mug cakes that you can make but this one is definitely one of my favorites. Who doesn’t love that mocha latte flavor and who doesn’t love cake. So combining the two was a no brainer. Fluffy or Fudgy how do you take your mug cake??
The texture of what the perfect mug cake is highly debated. While some prefer a fluffy fully cooked mug cake others prefer a fudgy lava cake texture. I’m on the fence as to which I prefer. I will say that the fully cooked mug cake has a dry sponge cake texture. The remedy for this is simply serving this mocha latte mug cake with a dollop of keto friendly whipped cream. Served with a few sliced strawberries to round out the plate for a beautiful presentation that looks like it took hours to make. While microwaving your mug cake you can quickly whisk together a ¼ cup of heavy cream with a ¼ tsp vanilla extract and a tbsp of keto friendly Sweetener. I prefer Allulose but you can use whatever you prefer. Once the whipped topping is thickened to a stiff peak it’s ready and so is your mug cake.

- Chop up dark chocolate then whisk together all ingredients until smooth
- pour into center of a 12oz Ramekin or wide coffee mug.
- for fully cooked mug cake microwave on high for 90 seconds. For a moister fudgy consistancy microwave for 75 seconds.
- Run a knife around sides of the ramekin then turn upside down and remove the cake. serve with whipped cream and sliced strawberries
