I think this recipe should be dedicated to wing stop or whatever commercial I saw on tv that inspired this recipe. I didn’t plan it, I didn’t think about it, I just made it on the fly and sometimes that’s how the best recipe come to be. this was one of those recipes. If you told me that I’d be deep frying chicken in bacon fat and dunking it in full fat mayonnaise to lose lbs I would have told you you’re out of your mind but here we are.
Rant Alert!!
I’m not a nutritionist and I don’t claim to have all the answers. that being said, making changes like ditching the carbs and eating a ketogenic diet has helped me lose over 250 lbs. Being able to have indulgent foods like boneless wings helps me stay on track. I will say that just because we cut out the majority of the carbs that doesn’t give us a blank check to eat like an a$$h**e. I track calories most of the time and if I’m planning on having a high calorie meal I plan it out and adjust my daily macros. Now that I’ve got that of my chest let’s make some Ketofied boneless wings.
The breading is really simple. I use two parts Pork King Good breadcrumbs along with Coconut flour and some spices. I’ve also substituted almond flour for breading and found that it’s a bit heavier a crust. I like the light coating on this recipe since I’m tossing the chicken in a sauce afterwards. If you don’t have any pork king good breadcrumbs you can always pulse some pork rinds in a food processor.

Chicken thighs are definitely recommended because they don’t dry out like chicken breasts. thighs also a lot more flavor If you’re not a fan of dark meat then please feel free to use chicken breast. When cutting up the thighs cut them into bigger chunks then you would breast meat. Normally I cut a chicken thigh into four equal size pieces and that tends to be the perfect size. If you’re using breast meat I recommend that you don’t cut the chicken pieces bigger than 2 inches. This will ensure that they cook quickly and don’t burn the outer crust.

Now what type of oil is healthiest is an often touchy subject. I tend to stay away from refined oils like canola and corn oils and prefer to use animal fats or avocado oil. Today I used a product called BACON UP bacon grease. It’s delicious yet not overpowering but you can definitely tell you’re cooking with bacon fat. It’s the best oil for frying in my opinion because of the high smoke point and the subtle bacon flavor. My target temperature is between 325-350 degrees F. The easiest way to monitor the temperature is using an infrared thermometer. Point and shoot and you can keep your temperature in range.

Peri Peri What?? Peri Peri Boneless Keto Wings!!
Once the chicken has reach GBD (Golden,Brown Delicious) it’s time to Sauce up your boneless wings. Obviously you can go with a classic bbq or buffalo sauce but that just wasn’t exciting enough for me. I decided it was the perfect recipe to use Peri Peri Sauce. If you’re not familiar it’s a North African pepper sauce with a spicy unique kick. Peri Peri Sauce is made from the bird's eye chili that is commonly grown throughout the Mozambique region in South Africa.
Harissa, is magic!!
Since I had South Africa covered it was time to move up the coast to North Africa. Now lets make a quick and easy Harissa dipping sauce. Harissa is a condiment made from roasted red peppers, garlic, chili’s and spices ground into a paste. It has a smoky aromatic flavor and the spice levels will vary from recipe to recipe. As I mentioned earlier if all this is too exotic for your taste buds just use your favorite buffalo sauce and ranch or bleu cheese. Otherwise come away with me on a global culinary journey of deliciousness then I welcome you aboard the flavor train to Keto town!!!
Note* calculating macros for this recipe can be a bit tricky since you’ll have extra breading and bacon fat. I estimate about 1 tbsp of bacon fat per serving and I estimated 75% use of the breading mixture.
Keto Peri Peri Boneless Wings
Ingredients
- 2 lbs Boneless Skinless Chicken Thighs
- ½ cup Peri Peri Sauce
- 4 tbsp Bacon Fat
- 1 cup Pork King Good Bread Crumbs
- ½ cup Coconut Flour
- 1 tsp Curry Powder
- 1 tsp Paprika
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- ¼ cup Heavy Cream
Instructions
- Cut up chicken into chunks then toss in heavy cream and spices. Let marinate for 30 minutes
- Combine pork king good breadcrumbs and coconut flour then dredge the chicken thighs in the breading so they are completely coated.
- Heat oil to 350 degrees F. Fry the chicken thighs for 5-7 minutes until fully cooked then remove and lay on paper towels to absorb excess grease.
- Toss in peri peri sauce and serve with harissa Aioli.

Ingredients
- ¾ cup Mayonaisse
- 2 tbsp Harrissa
- 1 tbsp Apple Cider Vinegar
- 1 tbsp Chopped Cilantro Optional
Instructions
- Blend all ingredients until smooth

I made this last night and it was perfect! I was careful with the Birdseye chili peppers and only used a little bit in the mild pepper (bell pepper) mix. It was hot but not too hot. It would be easy to tip over to the "too hot" side as these peppers are powerful! I fried most of the chicken but when I ran out of fry oil, I baked the few that were left (breaded) in a 350 degree oven for about 8 minutes. These also turned out great. I think next time I may actually bake rather than fry to save time. I can see becoming more familiar with the recipe and using this technique for several dishes!
