Yes, you read that right Bacon Avocado brownies are rich fudgy deliciousness combined with that salty sweet flavor combination we all love. These brownies are the perfect bite to tame any sweet craving you have while staying away from sugar and gluten.
As always I bring you a peculiar combination of ingredients that I’m imploring you to put together. I know that I am asking a lot but if you’ve enjoyed any of my other recipes than rest assured I wouldn’t lead you astray. Using bacon in desserts isn’t that uncommon but the key is to make the bacon as crispy as possible without burning it. Crispy bacon adds a smoky salty crunch that pairs quite well with chocolate. On the other hand chewy bacon incorporated into a dessert can be an absolute textural disaster.
You’ve got two options for preparing the bacon correctly for this recipe. The first is to buy precooked bacon and dice it up and sauté in a pan until it renders out all its fat then let it cool on a paper towel. This was the method I used because I always have strips of precooked bacon on hand for the kids when I need to make a quick breakfast. You can always cook off extra to save for bacon bits for salads.
The second method is to cook the bacon in the oven on a sheet pan lined with parchment paper. I bake the bacon at 400 degrees F. For about 20-25 minutes. Then I immediately drain off the liquid gold (bacon fat) in a container for later then transfer the bacon to paper towels to dry out. After the bacon is cooled you can chop it up. If you didn’t cook it long enough and the bacon is still chewy simply chop it up and sauté in a pan like the precooked method above.
We all know that the peak window to use avocados only lasts about 15 minutes. Just like the magical village Brigadoon that disappeared into the highland mist not to return for 100 yrs. maybe I’m a bit over dramatic but the point is I seldom grab an avocado when it’s perfectly ripe. In my effort to not waste any food I needed a recipe to use up tired avocados. That’s when I put together this recipe for Flourless Avocado Bacon Brownies. The avocado no matter how brown and ugly can be given a second chance at life by combining with cocoa powder and egg to make a delicious gluten free keto treat. The creamy texture of the avocado lends itself perfectly to the brownie batter giving the final product a fudgy texture.
If I’m being completely honest the answer to this question is...kinda sorta? Yes you may taste a slight earthiness that comes from the avocado but it’s incredibly subtle. The bitter cocoa and sweetener combined with the salty smoky bacon does a great job disgusting any avocado flavor but I still think you can taste it just slightly. If you love avocado then this won’t deter you from making these brownies but if you have these to someone who doesn’t like avocado be prepared to have that brownie thrown at your head.
