My Love of this Thai Egg Roll Bowl knows no bounds
I’ve got to level with everyone, I love Thai food! It’s always been one of my favorite cuisines and since going Keto I haven’t had any. I’ve seen lot of recipes for egg roll in a bowl or it's much more intense name “crack slaw”. If you’re unfamiliar it’s basically the filling from an egg roll sautéed in a pan and served in a bowl, kinda similar to moo shu without the pancakes. I wanted to come up with my own twist on the recipe. Thats when I came up with the idea to make a Thai version. This Thai Egg roll Bowl definitely exceeded expectation and will be added to my Keto meal prep Arsenal for sure.
I used ground pork for this version but you could substitute, ground beef, sausage, turkey or chicken .I’ve even substituted small shrimp and it was outstanding. I guess if you really wanted to make a vegetarian version you could but why...Ill only judge you a little.
Nobody Likes Mushy Cabbage
The biggest key in my mind is to not overlook the cabbage. Especially if you intend on portioning for meal prep. You only need to cook the cabbage for 2-3 minutes. The carry over cooking will finish off the cooking process. Ass soon as the cabbage is slightly tender remove it from the heat and then add the sauce to cool it down. then you can combine with the pork and portion out into Glass Meal Prep Containers.
I like to put a slice of lime in each container to add a little acid right before I eat. I also garnish each container with a spoon full of chopped peanuts, a drizzle of sriracha and a pinch of sesame seeds. This also keeps the colors bright and beautiful instead of that unappetizing green that cabbage can turn into.
The sauce may not be completely traditional. However, the Bright punch of lime and fish sauce brings all the bold flavors I associate with Thai cuisine. When combined with the spicy sambal oelek and coconut aminos you’ll be pleasantly surprised how fantastic this sauce is. This sauce can be used for plenty of other things like pouring over veggies or chicken. You could even make a spicy Thai “noodle” dish with some zucchini or Heart of Palm noodles. I’m sure once you make it once you’ll be thinking of excuses to make it again. Even though it’s around 10 carbs per serving it’s very filling and can definitely fit your macros.

Low Carb Thai Egg Roll Bowl
Ingredients
- 2 lbs Ground Pork or Chicken
- ½ Head Red Cabbage
- ½ Head White Cabbage
- ½ cup Chopped Cilantro
- ½ cup Sliced Scallions
- ¼ cup Chopped Thai Basil
- ¼ cup Chopped Mint
Thai Sauce
- 2 Limes Juice and Zest
- 1 tbsp Grated Ginger
- 1 tbsp Minced Garlic
- 1 tbsp Alternasweets Sugar Free Ketchup
- 1 tbsp Coconut Aminos
- 2 tbsp Fish Sauce
- 1 tbsp Sesame Oil
- 2 tbsp Sambal Oelek
- 1 tbsp Rice Vinegar
- 1 tbsp Spicy Chili Crisp
Garnish
- ½ cup Chopped Peanuts
- 2 tbsp Sriracha
- 2 tbsp Sesame Seeds
- 1 Sliced Jalapeno
Instructions
- Brown off pork in large pan. Remove pork ad drain off excess liquid. Set aside
- Saute sliced cabbage in the same pan for about 2-3 minutes until slightly tender but still crunchy. Turn off heat
- Prepare thai sauce in a seperate container and then add pork along with thai sauce back into the pan. toss with cabbage until sauce has coated the dish.
- Portion into 6 equal portions. Garnish with chopped peanuts, sesame seeds and sriracha (optional) Store in the Fridge for 5-7 days

I love your take on this, however, you have changed the recipe for the sauce- it used to include almond or peanut butter, yes? and i don't remember the Chili Crisp
