Gone Viral: Tiktok Baked Feta Pasta!
This is a recipe that like many other I discovered on social media. I spend the majority of my time on Facebook and instagram but recently I posted a video for Italian Rib Parmesan that went semi viral with over 175k views in 48 hours on Tiktok. While I was scrolling I quickly picked up on this Baked feta pasta trend that has taken the app by storm.
Its simple, just place a block of feta with a bunch of tomatoes around it, add olive oil and seasonings and bake. After that you mash the feta and tomatoes into a creamy sauce and add pasta. Once I saw it I knew I had to put a keto spin on the baked feta trend.
Making the Baked Feta Pasta Keto Friendly
As a keto recipe creator we have to make peace with substituting cauliflower for all sorts of things so when I saw the baked feta trend I knew roasted cauliflower would be a great substitute for pasta. Hearts of palm noodles would also work and I bet you could use any veggies you like in this recipe if cauliflower isn't your favorite.
Yes indeed. My family has a few members you flat out won't touch feta so I ended up making two batches of this recipe. One with feta and the other with Boursin Cheese. You could also use brie or any semi soft melting cheese.
What Kind of Feta Should you Use
When I said this recipe has caused a world wide feta cheese shortage I wasn't joking. The original recipe calls for a block of feta but I went to 3 grocery stores and all I could find was crumbled feta. Good news though, crumbled feta worked just fine and my recipe came out perfect.
I went back to the same grocery store just the other day and grabbed a block of feta so I will be making the recipe again using the block form this time.
On a side note there are numerous types of feta cheese so don't assume that all feta is created equally. Bulgarian Feta, though harder to find is absolutely fantastic and has an amazing creamy texture. Most feta is made from sheets milk but it can also be made with cow or goat milk or even a combination of the three.
Variations to making Keto Baked Feta w/ Roasted Cauliflower
Since I was already changing lots of things about this recipe I figured why not add some meat to the recipe. I decided that some sliced prosciutto would be a prefect compliment to the tangy feta and acidic tomatoes. You can add bacon or pepperoni if you dint have prosciutto. I think adding some salty cured pork to just about anything is a good idea

Keto Baked Feta w/ Roasted Cauliflower
Equipment
- 10 inch dutch oven or 12 inch cassarole dish
Ingredients
- 1 head Cauliflower cut into florets
- 1 pint Cherry Tomatoes
- 4 oz Feta Cheese Block or Crumbles
- 2 oz Prosciutto Sliced
- 3 tbsp Olive Oil
- 2 tsp Italian Seasoning
- ½ tsp Real Salt
- ½ tsp Black Pepper
- ½ tsp Granulated Garlic
- 2 tbsp Grated Parmesan
- 2 tbsp Fresh Parsley Chopped
Instructions
- Cut cauliflower into florets and place in the dutch oven along with cherry tomatoes, sliced prosciutto, olive oil and seasonings. toss everything together then pour the crumbled feta on top.
- Cover the pot Bake at 425 degrees F. for about 20 minutes then remove the lid and continure cooking for an additional 20 minutes just until the cauliflower is tender.
- Stir all of the ingredients together until the cauliflower is coated with the melted feta and tomato sauce. sprinkle on some grated parmesan and fresh parsley and serve.
