Buffalo Chicken Taquitos Recipe
This recipe is where easy and cheesy come together!
These tasty buffalo chicken taquitos come together in under 30 minutes and have only 8 grams of carbs.

Low Carb Buffalo Chicken Taquito Ingredients
The Shell: For this recipe, I used 5 Cutdacarb Flatbreads. Can’t find them in your local grocery store? You can also use low-carb tortillas.
Buffalo Chicken Mixture: To make the mixture you will need 32 oz of cooked and shredded chicken, 8 oz of cream cheese, ¼ cup of ranch dressing, ¼ cup of hot sauce, ½ cup of shredded cheddar cheese, ¼ cup of crumbled blue cheese, and 1 tbsp of BBQ dry rub.
Blue Cheese Celery Slaw: To make the delicious slaw that adds fresh flavor, you will need 2 cups of thinly sliced celery, 1 tbsp of fresh dill, ⅓ cup of crumbled blue cheese,⅓ cup of mayonnaise, 1 tbsp of white vinegar, ⅛ tsp of kosher salt, ⅛ tsp of black pepper, and 2 tsp of ranch seasoning
Garnish: Top of your taquitos with ¼ cup of sliced scallions and drizzle on top 1 tbsp of ranch dressing and 1 tbsp of hot sauce.
How to Make Buffalo Chicken Taquitos
Combine. Combine all the ingredients in the buffalo chicken mixture until smooth and set aside.
Prep the Taquitos. Cut your Cutdacarb flatbreads into two pieces, scoop on about ⅓ cup of the buffalo chicken mixture, and roll up on a sheet pan lined with parchment paper.
Prep the Slaw. To prepare the Celery Slaw simply stir together all the ingredients and chill in the fridge for at least 1 hour before serving.
Bake the Taquitos. Once all the taquitos are rolled up, bake at 400 degrees F. for about 20 minutes until golden. Either serve with celery slaw or top with cheddar and blue cheese and bake for an additional 5 minutes until the cheese is melted.
Recipe Tips, Tricks, and Variations
Cheese. Change things up and swap out the cheese for different flavors. Some options I would consider are provolone cheese, pepper jack cheese, Colby jack cheese, or if you like living on the wild side, ghost pepper cheese. Something important to note: cook times may vary slightly depending on the type of cheese you use.
Add some heat. Looking to add some heat to your taquitos? Consider chopping up some jalapenos or chipotle peppers.
Meat. You don’t always have to stick to chicken when making taquitos. Consider swapping out the meat to make Low Carb Beef Taquitos or Low Carb Pulled Pork Taquitos.
What to Serve with Taquitos
You can serve up these taquitos as a main dish, appetizer, or tasty side dish.
If you are serving them as a main dish, I would recommend pairing them with a fresh green salad to keep the carbs low. If you are serving a group that may not be as carb-conscious, consider making a side of Spanish Rice.
How Many Calories are in Buffalo Chicken Taquitos?
If you follow this recipe exactly, the serving size is 2 Taquitos topped with either blue cheese or cheddar cheese or 2 tbsp of the celery slaw containing 540 calories.

Absolutely! Buffalo wings are a fantastic option while on keto or if you are looking for an easy low carb recipe.
